Zucchini bread, zucchini fritters, cream of zucchini soup, grilled zucchini, zucchini involtini...yada, yada, yada...
As you can imagine, even though it is a mighty righteous veggie (it has only 36 calories per cup, loads of antioxidants, tons of fibre, vitamin A,C and folate as well as aiding in the prevention of prostate cancer, heart disease, inflammation and cholesterol), eating it every night can become pretty tiresome!
But why not save some for another time...say when tomatoes are in season and you are tired of those? I picked 3 huge zucchini that somehow managed to escape my eye when I was in the garden and they grew to an enormous size. Unfortunately, when they get big, they become spongy and "seedy" in the middle which makes them a bad candidate for the grill. But, why not remove the unwanted parts and grate them for another time?
This process (which took about 10-12 minutes) made enough to bake 8 recipes of zucchini bread...brilliant, no??
